Ingredients
- 1 pound boneless chicken thighs
- 2 inch knob of ginger
- 3 tablespoons soy sauce
- 1 tablespoon mirin
- 1/2 cup potato starch
- oil for frying
- *Optional ā lemon wedges for serving*
Directions:
- Cut the chicken thighs into one inch pieces, removing the skin if you wish, I kept it on.
- Grate or mince the ginger, then mix with the soy sauce and mirin.
- Add the chicken, cover and let marinate in the refrigerator for 30 minutes to 2 hours.
- Pat dry the chicken to remove excess moisture, then dredge each piece in cornstarch, making sure it is evenly covered.
- Heat a small pot over medium high heat with enough oil to just cover the chicken. The oil needs to reach 360 degrees, or you can test the heat with a test piece of batter. Add a few pieces of chicken to the oil at a time, making sure not to crowd the pan.
- Fry the chicken pieces for about 5 minutes until the exterior is golden.
- Transfer to paper towels to cool. Serve with lemon wedges.
