Jap fried chicken

Ingredients

  • 1 pound boneless chicken thighs
  • 2 inch knob of ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1/2 cup potato starch
  • oil for frying
  • *Optional ā€“ lemon wedges for serving*

Directions:

  1. Cut the chicken thighs into one inch pieces, removing the skin if you wish, I kept it on.
  2. Grate or mince the ginger, then mix with the soy sauce and mirin.
  3. Add the chicken, cover and let marinate in the refrigerator for 30 minutes to 2 hours.
  4. Pat dry the chicken to remove excess moisture, then dredge each piece in cornstarch, making sure it is evenly covered.
  5. Heat a small pot over medium high heat with enough oil to just cover the chicken. The oil needs to reach 360 degrees, or you can test the heat with a test piece of batter. Add a few pieces of chicken to the oil at a time, making sure not to crowd the pan.
  6. Fry the chicken pieces for about 5 minutes until the exterior is golden.
  7. Transfer to paper towels to cool. Serve with lemon wedges.
